Stachys byzantina Big Ears
Lamb's ears is grown for the feel of it as much as the look, and 'Big Ears' has the largest leaves of any of them: soft, thick, silver-grey and covered in dense white felt, up to twice the size of ordinary lamb's ears. They overlap into a low mat that holds its silver all year. Unlike the common form it rarely flowers, which is the reason many gardeners choose it.
Silver at ground level does a specific job: it separates strong colours and softens the edge of a path or a bed. Use it along a border front, spilling over a low wall, in a gravel garden, or in a wide shallow container. Children reach out to touch it, which makes it a good plant for a family garden.
Full sun and sharp drainage are essential. This plant comes from dry country and its one real weakness in New Zealand is humidity: the felted leaves hold moisture and rot in a wet warm spell, particularly in the north. Plant it on a slope or a raised bed, avoid overhead watering, and give it space so air moves through the mat.
Makes a mat 0.2 to 0.5 m tall and 0.5 m to 1 m across.
Trimming: Pull out rotted or browned leaves by hand whenever you see them, which matters more here than any seasonal prune. Comb the mat over in late winter to clear the debris that has collected underneath, and remove the occasional flower spike if you would rather it stayed as foliage.
Fertilising: Do not feed. Fertiliser produces larger, softer leaves that rot faster, and lamb's ears is at its best in soil most perennials would find too poor.
Watering: Water to establish only, and always at ground level. Wetting the felted leaves is the fastest way to lose a patch, and established plants are properly drought tolerant.
Pest Control: Slugs and snails shelter under the mat in damp weather and chew the leaf undersides. Lift and check the edges after a wet spell.
Disease Management: Rot in humid or wet conditions is the main issue and it shows as collapsing brown patches through the mat. Pull the affected leaves out, improve drainage and airflow, and the plant usually grows back over the gap.
